白色单斜晶系或六方晶系晶体，或白色结晶粉末。无臭，有特殊甜味。 易溶于水，在水中的溶解度：25℃时为25g/100ml；50℃时为39.1g/100ml；75℃时为54.4g/100ml；100℃时为67.2g/100ml。极难溶于乙醇，在100g无水乙醇中约溶解0.06g。几乎不溶于丙酮和乙醚。
用于(/)工业、生化(/sell/24/)及有机(/article/8/)
用作缓冲剂，用于组织培养基的制备，铜、金和银的检验，医药上用于治疗重症肌无力和进行性肌肉萎缩、胃酸过多、慢性肠炎、儿童高脯氨酸血症等疾病。
治疗重症肌无力和进行性肌肉萎缩；治疗胃酯过多症，慢性肠炎（常于抗酸剂合用）；与阿司匹林合用，可减少其对胃的刺激；治疗儿童高脯氨酸血症；作为生成非必需氨基酸的氮源, 加入混合氨基酸注射液中。
甘氨酸主要作为鸡饲料营养性添加剂。
营养增补剂。主要用于调味等方面。
调味 与丙氨酸合用于含醇饮料，添加量：葡萄酒0.4%，威士忌酒0.2%，香槟酒1.0%。其他如粉末汤料约添加2％；酒糟腌的食品1%。由于其能一定程度呈虾、墨鱼味，可用于调味酱。
对枯草杆菌及大肠杆菌的繁殖有一定抑制作用。故可用作鱼糜制品、花生酱等的防腐剂，添加量1%～2%。
缓冲作用 因甘氨酸为具有氨基和羧基的两性离子，故有很强的缓冲性。对食盐和醋等的味感能起缓冲作用。添加量为盐腌品0.3%～0.7%，酸渍品0.05%～0.5%。
抗氧化作用(利用其金属螯合作用) 添加于奶油、干酪、人造奶油可延长保存期3～4倍。为使焙烤食品中的猪油稳定，可添加葡萄糖2.5%和甘氨酸0.5%。速煮面用的小麦粉中添加0.1%～0.5%，同时可起调味作用。医药上用作制酸剂(胃酸过多症)、肌肉营养失调治疗剂、解毒剂等。亦为苏氨酸等氨基酸的合成原料。
按我国GB 2760&96规定可用作香料。
甘氨酸又名氨基乙酸(aminoacetic acid)，在农药生产上用于合成拟除虫菊酯杀虫剂的(/sell/19/)甘氨酸乙酯盐酸盐，也可合成杀菌剂异菌脲和除草剂固体草甘膦，另外，它也用于化肥、医药、食品添加剂、调味品等行业。
该品在化肥工业中用作脱除二氧化碳的溶剂。在医药工业中，可用作氨基酸制剂、金霉素的缓冲剂和作为抗巴金森氏病(/)L-多巴的合成原料，又是咪唑酸乙酯的中间体，其本身也是一种辅助治疗药，可治疗神经性胃酸过多，对抑制胃溃疡的酸过多亦有效。在食品工中业用作合成酒、酿造制品、肉食加工和清凉饮料的配方和糖精去基剂，作为食品添加剂，甘氨酸可作为调味品单独使用，也可以与谷氨酸钠、DL-丙氨酸，枸橼酸等配合使用。在其他工业方面，可作为pH调节剂，添加于电镀液，或者用作其他氨基酸的原料。在有机合成和生物化学中用作生化(/sell/21/)和溶剂。
医药及农药中间体，化肥脱二氧化碳溶剂，电镀液等
化肥工业用作脱除二氧化碳的溶剂。医药工业用作金霉紊的缓冲剂、氨基制酸剂，用于制备L型多巴等药物，食品工业用作调味剂、糖精去苦剂，用于酿造、肉食加工、配制清凉饮料。另外，还可用作pH值调节剂和用于配制电镀液等。
用作生化试剂，用于医药、饲料和食品添加剂，氮肥工业用作无毒脱碳剂
