咖啡机炮制出的醇香
咖啡是世界上最流行的饮品之一，它是舌尖上的味道，是味蕾的征服者，不仅给人们带来愉悦和兴奋，更给人带来闲适和惬意。一杯完美的咖啡，需要咖啡机的精心冲泡才能芳香四溢。

咖啡机用10个左右的大气压力，迫使90℃左右的热水穿过10克左右的幼细的经过挤压的咖啡粉，汲取咖啡粉中的咖啡脂等芳香物质，并与热水达到充分溶合后流入杯中，整个过程是一个物理化学变化的综合过程，而且要在18-28秒的时间内完成，以便有效地避免过份提取所造成的不良味道。

孕育期：1900年之前咖啡萃取的“完美蒸汽论”
1818年，Romershausen博士在普鲁士取得一项”萃取器”的专利。
&& 1822年，法国人Louis Bernard
Rabout取得一项专利，是利用吸油墨纸的特性结合Romershausen博士所设计的基础上，用以获得更洁净的萃取液。
1824年，巴黎工匠Caseneuve设计了一款过于复杂而无法制造的咖啡器具，希望能避免香气的散失。
&&&1827年，Laurens在法国的专利则是强调咖啡萃取前，需先以蒸汽湿润咖啡粉。
&& 1833年，英国人Samuel
Parker的发明则是利用泵将水往上打通过咖啡，而不是让水向下流过咖啡。
1838年，巴黎的眼镜师Leburn设计了多款小型桌上咖啡器，在南欧非常流行。
1840年，Tiesset设计一个真空泵将热水往下拉,以额外的力度通过咖啡粉。
1844年，法国人Cordier在他申请的专利中画了许多款咖啡萃取器，其中有一款与30年后Eicke的德国机器很相似。
&&&1847年，Romershausen制作了一个蒸汽压力咖啡锅。
1855年，法国人Loysel引进一款大容量的吧台咖啡机（高约4.5公尺)，号称每天制作10，000杯咖啡。
1868年，维也纳人Reiss研发出新型“维也纳壶”。
&& 1885年，意大利人Angelo
Moriondo签下的咖啡专利，一次可以制作50杯份。

Bezzera所设计的咖啡机申请专利成功。
&&&1902年其友人Desiderio
Pavoni在这台机器的基础上添加了卸压活塞装置，还将此种机器商业化，进行生产销售。
1903年，Bezzern因财务困难以一万里拉的代价将专利权转卖给Pavoni。
&& 1905年，La Pavoni公司宣布成立。
1906年，意大利人Arduino申请专利，在机器内装入一个热交换器来快速的将水加热。
&& 1909年，Luigi
Giarlotto在机器中加入了泵，从而解决了萃取中压力不足的问题。
1910年，他的第二个专利为螺旋下压式活塞，可将咖啡所有的美味由活塞挤出。
1935年，Illy博士发明了第一台使用压缩空气来推动水通过咖啡粉的机器。
1938年起，锅炉的放置成功的由原来的垂直放置改良为了水平放置。

青春期：压力变大水温下降，“黄金泡沫”的诞生
1948年，Gaggia将活塞式杠杆弹簧咖啡机引进市场。
1952年，一夜之间大型的直立机消失了。
&1956年，Cimbali使用液压系统可避免在使用杠杆时耗费太多的力气。

成熟期1962年之后：电子零件的普及化、“热交换、热循环”的优势
1955年，Giampietro Saccani跨出重要的一步——维持冲煮头温度的稳定。
1961年，意大利与西班牙合作生产E61机型。在过去热水是被加压，但现在则是先将水加压再加热，相对于过去是一个完美的革命。

咖啡机的分类
半自动咖啡机
半自动咖啡机，俗称搬把子机，是意大利传统的咖啡机。这种机器依照人工操作进行磨粉、压粉、装粉、冲泡，人工清除残渣。这类机器有小型单龙头家用机，也有双龙头、三龙头大型商用机等，较新型的机器还装有电子水量控制，可以精确自动控制酿制咖啡的水量。

这一类机器主要在意大利生产，在意大利非常流行。它的主要特点是：机器结构简单，工作可靠，维护保养容易，按照正确的使用方法可以制作出高品质意大利咖啡。这种机器的缺点是：操作者要经过严格培训才能用这种机器作出高质量的咖啡，而且不容易保持咖啡品质的一致性。此外，这种机器工作效率比较低。著名品牌有：La
Pavoni、la Cimbali、Nuova Simonelli、Boslio等。

全自动咖啡机
人们把电子技术应用到咖啡机上，实现了磨粉、压粉、装粉、冲泡、清除残渣等酿制咖啡全过程的自动控制，创造全自动咖啡机。高品质的全自动咖啡机按照最科学的数据和程序来酿制咖啡，而且都设有完善的保护系统，使用起来既方便又可靠，只需轻轻一按就可得到高品质的咖啡，其品味优于传统咖啡机的产品。瑞士、德国、意大利等国生产的全自动咖啡机品种繁多。其中瑞士制造的全自动咖啡机设计巧妙、质量稳定可靠，独具特色，并在国际咖啡机业享有盛名。
知名的全自动咖啡机制造商有Solis、Saeco、Schaerer、LaCimbali、Catina、Nuova
Simonelli、OR.EN、等。全自动咖啡机依每小时酿制咖啡的杯数（一般从每小时产60杯到280杯）分为大、中、小型，品种繁多，适用于商业、零售业、餐饮业以及办公室和家庭。
